Healthy "Waldorf Salad"

Using a lighter dressing and replacing the nuts and raisins with cauliflower makes this a healthy, crunchy, filling salad.








Mock Waldorf Salad

1 small apple, finely chopped
1 c cauliflower, finely chopped
1/2 c celery, finely chopped
2 Tbs fat-free mayonnaise
lemon juice, splenda, and salt to taste

Mix the mayo, lemon juice, splenda, and salt. Pour over chopped veggies and mix well.

Makes 1 large serving; About 75 calories; 1 point.
